Juicy Air Fryer Chicken + Zucchini Meatballs
Raise your hand if you love meatballs!!
I don’t discriminate when it comes to meatballs, I like them all! Give me sweet/spicy/Italian even chicken/pork/beef. Whatever they are, I’ll have them!
I’ve been experimenting a little more with my air fryer and I am a BIG BIG fan. So obvi I had to try some meatballs in there.
I of course had to add in some zucchini in there because VEGGIES = NUTRIENTS, plus it makes them extra juicy.
You can make these meatballs as an appi, throw them in a sub, with pasta or over some arugula. Top with pesto, in a butter sauce or with marinara. These meatballs can do it all!

Ingredients:
1 lb ground chicken
1 zucchini, finely grated + drained
2 cloves garlic, minced
1 egg
2 tbs parsley, minced
1 tbsp basil, minced
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp Italian seasoning
1/2 tsp chili flakes
Directions:
Preheat your air fryer to 400 degrees F.
Finely grate your zucchini. Using a dish towel, squeeze out excess any liquid from the zucchini. Add the zucchini to a dry bowl and combine the remaining ingredients.
Stir until the ingredients are evenly incorporated, but try not to over mix.
Form the mixture into golf ball-sized balls. I used a cook dough scooper to keep the size consistent.
Pro tip: spray a little cooking oil on your hands to keep them from sticking (I used avocado oil).
Place meatballs in air fryer and cook at 400 degrees F for 7-10 min. Internal temp should be 165 degrees F.
Dip in some marinara as an appetizer, over some pasta or pair with some arugula.
