Chocolate Chip Banana Bread Baked Oats
It’s nice to switch up our usual savory breakfasts for something sweet. This baked oats recipe is always in my rotation when I have a bunch of extra ripe bananas lying around! I love how you can add any sort of topping and it makes is a brand new dish.
Notes:
Sub chocolate chips for any fruit of your choice. I love using blueberries or apples. Nuts are also delicious in it! You can pair with with some greek yogurt for some extra protein if you want too.
Ingredients:
1 over ripe banana
2 cups organic oats ( I love One Degree Organic, Sprouted + Rolled Oats)
2 scoops of unflavored collagen powder (optional)
1 cup egg whites
1 tsp vanilla
1 tsp cinnamon
1 tsp baking soda
1/2 cup oat milk
1/4 cup mini chocolate chips
Directions:
Preheat oven to 350 degrees F.
In a medium mixing bowl, mash the banana. Then sprinkle in the unflavored collagen powder and combine well.( If you don’t have collagen powder, don’t worry about it! It just sneaks in some extra protein.)
Next. add the the oats, egg whites, vanilla, cinnamon, baking powder, salt and nutmeg. Whisk to combine. Then gently fold in the mini chocolate chips.
Spray an 11 x 7 (2 qt) baking dish with a little avocado oil.
Bake for 30 minutes or until the center is set.
