Mayo-Free Healthy Chicken Salad
Greg hates mayo and we split a lot of our meals. So it’s always, “No mayo please.” And now 7 years later… I’m kinda grossed out by mayo too.
So I HAD to come up with a healthy mayo-free chicken salad recipe! The best part is the crunch from the celery, apples and pickles. It sweet, yet salty... just perfectly balanced.
It feels a lot lighter than a regular chicken salad too, which makes sense since there is no mayo!
Try this for your next lunch, I know you are going to love it!
Notes:
I used a can of Wild Planet organic roasted chicken breast, but you could use rotisserie chicken or whatever baked chicken breast you have on hand. you make sure you chop into small bite sized pieces.

Ingredients:
5 oz can of Wild Planet Organic Roasted Chicken Breast (no salt)
1/3 cup of celery, finely chopped
1/4 cup of dill pickle chips, finely chopped
1/4 cup of honey crisp apple, finely chopped
1/2 avocado
1 tbsp red wine vinegar
1 tbsp green onion, thinly sliced
1 tbsp dijon mustard
1 tbsp sesame tahini
1 tbsp fresh dill, finely chopped
Salt/pepper to taste
For garnish:
Dill
Green onion
Directions:
In a large mixing bowl combine all of the ingredients. Mix everything together until it's well combined. Let it chill in the fridge until you're ready to serve.
Garnish with some more dill and green onion.
Serve over toast, in a lettuce wrap, over a salad, with some crackers or eat it straight out of the bowl!
