Protein Pancakes
I love a good pancake, but there isn’t much nutritional value to them. So I added a little protein powder and topped with some fruit and little almond butter, instead of maple syrup!
Ingredients:
2 eggs
40g of vanilla protein powder (two scoops)
1 ripe banana, mashed
2 tsp ground flax
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp baking powder
For garnish:
Strawberries
Banana
Almond Butter
Directions:
Add ingredients to a blender. Mix on high speed until smooth.
Preheat non-stick skillet to medium heat. Spray with cooking spray. Add 2 heaping tablespoons of the batter and spread around to form a medium sized pancake. Cook for 4 minutes on the first side or until edges start to harden and bubbles start to form on the surface.
Flip and cook for an additional 1-2 minutes on the other side.
Top them up with with all the things.
