Pumpkin Overnight Oats

Here is a fall inspired overnight oats recipe that’s perfect for meal prep. Super easy to make, no cooking required! Just combine, mix well and store in fridge overnight. Then they are ready to go the next day! Makes about 4 servings so you will have breakfast ready to go for the week. 

Ingredients:

  • 2 cups GF organic rolled oats

  • 1/3 cup pumpkin purée 

  • 2 tbsp chia seeds 

  • 1/2 tsp vanilla

  • 1/4 tsp pumpkin pie spice 

  • 1/4 tsp cinnamon 

  • 1 scoop vanilla protein powder 

  • 2.5 cups oat milk (or any milk) 

To garnish:

  • Pumkin seeds

  • Cacao nibs

  • Pecans

  • Eat Love Bird cinnamon cereal

Directions:

  1. Combine all ingredients in a large mason jar and stir to combine well. Leave in jar in fridge overnight or at least 2 hours.

  2. Top with pumpkin seeds, cacao nibs, pecans and @eatlovebird cinnamon cereal.
